Our cattle are raised about an hour outside of Santa Fe, New Mexico. The cows here roam freely, as far as the eye can see with extremely minimal handling. They’re as close to wild as it gets. For those familiar with New Mexico, it might sound surprising that there’s so much lush green grass for them to graze on.
These fields are naturally irrigated by a sparkling river flowing with ice-melt from the Sangre de Cristo mountains. As you might guess, this means the grass is incredibly pure and nutritious. Our cattle enjoy the shade of large trees, blue sunny skies and direct access to this river. It’s a wonderfully relaxing environment to spend time in, whether you’ve got four legs or two.

The history of humans eating beef stretches back across millenia, into the depths of time. The auroch, an ancient predecessor of the modern-day cow, is depicted in early cave paintings. It’s thought that domestication of this ancestral creature occurred in two separate events, as far back as 10,500 years ago. They originated in Eurasia and Northern Africa. Aurochs were known for being aggressive and fiercely tempered, a far cry from the docile animals we know today.
The cow was a symbol of fertility and the powerful nurturing energies of the earth across many ancient cultures. They have often been used as a marker of wealth, increasing the social status of families and comprising dowries for brides. The rich history of connection between humans and cows is not surprising considering the vast array of resources they provide.
The milk, meat, fat and blood supplied ancient cultures with sustenance and vitality. Humans were able to make shelter, clothing and tools from the hides, bones, horns and hooves. The droppings could be used as fuel. Domesticated cattle became muscle-power for carrying loads and pulling plows.

Longhorn cattle were brought by Spanish explorers to North America in 1534, and Devon cattle were introduced from Britain in the early 1600s. Over time, more breeds of cattle made their way to the land of the bison. Compared with Europe, America had extremely vast spaces of grassland and pastures ideal for raising these large mammals. Beef became a mainstay of American culture, and was the most popular meat in the country for several centuries.
In modern times, the majority of beef is raised on factory farms. Cows in these environments are pumped full of antibiotics due to their cramped and unsanitary living conditions. They’re often given growth hormones and other chemicals like those found in the GMO grains that their diets consist of. Fertilizers and chemicals used on these farms pollute the land and water. Organic beef is a step up from these conditions, but the cattle can still be kept in confinement for some portion of the time.

They can be fed grains as long as they’re organic, in combination with some grazing. Cows aren’t meant to eat corn and often experience poor digestion and illness as a result. When you buy grass-fed beef, all of the animals are raised exclusively in open pastures and never confined. However, under this labeling they can still be fed grains as long as the majority of their diet consists of grass. To ensure that your beef is grain-free, make sure that it’s grass-fed and grass-finished. Grass-fed beef is lower in fat and calories than conventional beef. It also contains a whopping three to six times more omega-3 fatty acids than meat from grain-fed cattle. Omega-3’s offer a cornucopia of health benefits including enhanced cognitive function and reduced risk of depression, dementia and arthritis.
It helps protect against heart disease, and research has shown that sufficient levels of omega-3 can lower the risk of heart attack by 50%. The reason our beef contains such high levels is because omega-3 is most commonly found in green, leafy grasses and plants. Beef from grass-fed cows is very high in conjugated linoleic acid, or CLA.

This fatty acid is extremely beneficial to the body and helps to maintain optimal blood sugar levels, as well as preventing diabetes.
