WHERE IT STARTED

Beck & Bulow began at a Santa Fe farmers market in 2018. Two people, a folding table, and bison raised with a standard most grocery stores couldn't meet. Customers noticed. They kept coming back.

In those early years we ran our own bison ranch in New Mexico — learning firsthand what it means to raise animals the right way, on land you know, with full visibility into every decision. We also operated a seafood processing facility in Alaska where we flash-froze fish at the point of catch — because we believed the same standard that applied to land animals should apply to what came out of the water.

Both experiences shaped the sourcing criteria we hold every product to today.

WHAT WE DO

We source, hand-pack, and ship premium meats from producers who raise animals the right way — pasture-raised, no antibiotics, no added hormones. Bison, elk, wild boar, wagyu beef, lamb, heritage pork, and wild-caught seafood. Hard-to-find cuts and everyday staples, packed by hand at our butcher shop on Cerrillos Road and shipped frozen with dry ice directly to your door.

Our customers range from home cooks and backyard grillers to professional chefs and over 1,500 restaurants and hospitality groups nationwide — from beloved local spots to some of the most recognized names in the industry. The Butcher Shop

In March 2021 — during a moment when most businesses were closing — we opened our butcher shop at 1934 Cerrillos Road in Santa Fe. It's where every order is packed by hand, where our team works, and where customers in New Mexico can walk in and see exactly what we're about.

We've been awarded #1 business in Santa Fe.

The Ranch

In 2025 we established our base of operations on a 120-acre property in Lamy, New Mexico — formerly the New Mexico Girls Ranch, a piece of land with its own deep history of community and purpose.

High desert country, 20 minutes south of Santa Fe. It's where we host ranch events, build sourcing relationships, stay connected to the land this brand was founded on — and where the Beck & Bulow community comes together in person.

Beyond the shop.

We've been invited to represent American food on the international stage — making the case that American cuisine is something deeper than fast food. We've had conversations with luxury hospitality groups around the world about supplying our meats. We've pursued first-of-kind export opportunities for American bison into new markets.

We speak at events across the country wherever people are thinking seriously about food, land, and what it means to eat well.
