In 2018, I moved to Santa Fe and had a friend that was a food broker. I kept saying to Jean Paul Bulow, my business partner, Find me some high-quality bison, buffalo. I could buy it from Costco or Smith’s, but they add beef.

JP finally called me back: Tony, this guy called. He’s retiring. He wants to get rid of his bison business.

So we went to meet him. This guy’s like 76, from South Dakota, and he’s like, My kids aren’t interested in this. He was selling a little bit at the farmer’s market. At the time, I was done with working in real estate and cryptocurrency. I was like, I can’t do it anymore. My soul, I can’t do it...

Sometimes everything comes together to create the perfect dinner party—the kind of gathering you can’t forget, such as this one from Beck and Bulow. Hosted by Jean Paul Bulow and Tony Beck, the setting, the food, and some very relaxed bison, made for a magical moment.

There will be others, to be sure, but none quite like the first. A chance bid at a Beck and Bulow charity fundraiser auction brought families together for a ranch dinner in an arroyo that cuts through the high valley. It doesn’t get more “local” than this.

Unless otherwise noted, the food service establishment has “approved” status from the New Mexico Environment Department. Violations of the New Mexico Food Code are often corrected onsite during an inspection. Some require a reinspection within three business days. Others require a corrective action response outlining the establishment’s plan to address the violation and how long the corrective measure will take.

Those encouraging early returns occurred across a variety of businesses — Kakawa Chocolate House, the quality meats firm Beck & Bulow, and Reflective Jewelry — while the Plaza certainly appeared to be bustling with activity just before lunchtime on Friday, the first day of a series of holiday shopping events that included Black Friday, Small Business Saturday and Cyber Monday.

While a rash of recent high-profile business closings may have left some Santa Fe residents feeling uneasy about the economy, the early returns from the holiday shopping season may offer a brighter outlook.

Several merchants around the city were reporting robust sales as the holiday season got into full swing this week, with a couple of them — Kakawa Chocolate House and Beck & Bulow — indicating their business was booming.

As 2024 draws to a close, readers of The New Mexican’s business coverage in the Dec. 31 edition will have the chance to learn about two local enterprises headed in different directions as they approach distinct milestones.

The first, Beck & Bulow, is a local premium meats supplier that offers wholesale, retail and online sales from its Cerrillos Road storefront. But by February, the company will have moved much of its operations to the 120-acre ranch in Lamy it recently purchased.

Arable is soon to be featured on the Food Network’sDiners, Drive-Ins & Dives, and filming brought celebrity host Guy Fieri to the restaurant at Eldorado’s Agora Shopping Center in May.
