Recipe: The Most Delicious Homemade Chicken Caesar Salad
When it comes to salad, Caesar has always been my favorite. It’s creamy, tangy and has the perfect balance of flavors and textures to be absolutely delicious. The addition of juicy pieces of grilled chicken makes it a complete meal, and that much more satisfying.
Although you certainly could make this recipe quicker by buying premade dressing, the homemade version is incredibly tasty and worth the extra time if your schedule allows. You could also make your own croutons, although I opted to take the easy way out on this step and just buy some yummy ones from a local bakery.

An Iconic Salad Born Out of A Moment Of Necessity
It’s said that this iconic salad was invented in Tijuana, Mexico by an Italian immigrant named Caesar Cardini. He owned a restaurant in the Mexican city bordering San Diego, California. The story goes that they were running low on ingredients one busy night in the kitchen, and Caesar was forced to come up with an impromptu salad recipe for tableside service. He put together what is now known as the Caesar salad in the summer of 1924 and it enjoyed instant popularity that only continued to grow.

These birds are humanely raised and cage free, with plentiful space to roam freely in cozy, well-ventilated barns with access to the outdoors. They enjoy unlimited access to water and nutritious vegetarian food supplemented with enzymes, essential oils and vitamins. The chickens frequently relax in their cozy beds made of wood shavings and rice hulls.
They are a Cobb Hubbard hybrid breed, carefully selected for the great flavor and consistency of the meat as well as their docile temperament. The barn attendants are trained in chicken behavior and take care to make the environment as naturally supportive as possible.

Ingredients:
- 1 lb boneless, skinless chicken breasts, grilled and sliced
- 7 cloves of garlic, peeled
- ¾ cup mayonnaise (the better quality mayo, the better the dressing will taste)
- 4 cans of anchovies with capers, drained
- 2 tablespoons grated Paremsan cheese + more to taste (between ¼ and ½ cup)
- 1 tablespoon fresh squeezed lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ¼ cup extra virgin olive oil
- 4 cups croutons of choice (or make your own)
- 1 large head of fresh romaine lettuce, chopped into bite sized pieces
- Sea salt and freshly ground black pepper to taste

Instructions:
- Thaw the chicken breasts overnight. Before cooking, let them sit out at room temperature for around 20 minutes to ensure they cook evenly. Pat dry with paper towels before cooking. Season generously with salt and pepper on all sides. Grill the chicken breasts either on an outdoor grill or pan sear on the stovetop. Cook to an internal temperature of 165 degrees Fahrenheit. Set aside to rest for five to ten minutes, then cut into pieces for the salad.
- Start making the dressing. First, Put three cloves of garlic in the food processor and pulse. Then add in the mayonnaise, anchovies and capers, lemon juice, Worcestershire sauce, mustard and two tablespoons of the Parmesan cheese. Process until blended to a smooth texture. Transfer to a bowl and season to taste with salt and pepper. Set aside.
- Place the chopped romaine lettuce in a large serving bowl. Toss thoroughly with the dressing so that all of the lettuce is evenly coated. Add in the rest of the Parmesan cheese as desired and the croutons. Toss again to combine, being careful not to crumble the croutons.
- Divide the salad into four bowls or plates for serving. Top with the sliced grilled chicken and serve immediately.
