Buttery Brioche Alaskan Dungeness Crab Roll Sandwiches
I’ve always preferred crab to lobster, which I know is an uncommon opinion. It’s one of my ultimate favorite foods, in particular the sweet and incredibly satisfying flavor of our wild Alaskan Dungeness crab from the Bering Strait. Even though I’ve never been a huge fan of lobster by itself with butter - or at least in comparison to eating crab the same way - lobster rolls are a completely different story.
Those scrumptious sandwiches are like a little piece of heaven and are one way that I am always down to enjoy some lobster. But what could be even better for a crab lover like me? A crab roll, that’s what. These buttery sandwiches made with our Dungeness crab are next-level delicious and will have everyone raving.

The best part is, these couldn’t be easier to make. Simply thaw the crab and it’s already cooked to perfection, then mix in some high quality mayonnaise (it makes a difference, trust me). Slather some butter onto fluffy brioche hot dog buns and toast them, then add fresh lettuce and fill with the crab mixture. Top everything off with some white pepper.

The Most Delicious Crab You’ve Ever Tasted
Our Dungeness crab comes in clusters with the shell on, lightly pre-cooked by the fishermen who catch them before they’re flash frozen. They’re delicious served steam with butter, cooked into crab cakes, in soups, with some delicious steak as surf & turf… the options are endless. The Dungeness has a sweeter flavor than other types of crab, making it more desirable than even the famous King crab for many seafood lovers. Crab is considered one of the most sustainable seafoods you can choose according to Seafood Watch.
They are very difficult to catch as they are highly skilled at hiding and avoiding traps. Our fishermen use traps known as “pots” baited with various tasty treats for the crabs. In many places along the West Coast of the United States, dungeness crab season peaks during the winter. However, in these frigid waters off the coast of Alaska, Dungeness crab is readily available year round.
We’re really lucky to have access to this top quality crab meat and love the fact that it supports local Alaskan fishermen who have been crabbing for generations and will pass their skills onto their children. We always purchase seafood directly from fishermen, eliminating any third parties and keeping money in the pockets of fishermen and their families.
Ingredients:
(Serves 4)
- 1 pound Dungeness crab meat (shelled)
- ¼ cup good quality mayonnaise
- Sea salt to taste
- Freshly ground white pepper
- 4 tablespoons butter, softened
- 4 brioche hot dog buns
- Lettuce for serving

Instructions:
- Mix the crab meat and mayonnaise together in a bowl. Be as gentle as possible to allow the crab to maintain its form. Season with sea salt to taste.
- Heat a large cast iron skillet over medium heat. Generously spread the butter on the insides of the brioche hot dog buns and cook until they’re golden brown and slightly crisped.
- Line each bun with lettuce, then fill with the crab meat mixture. Season with freshly ground white pepper. Serve and enjoy immediately.
