Springtime Update & Tropical Seafood At Beck & Bulow
As the weather is heating up and northern New Mexico is caught under a thick layer of smoke from wildfires, we are praying for rain to come soon here at Beck & Bulow. It’s a strange juxtaposition as our female buffalo prepare to give birth to their calves while the fires rage right next to our ranch near Las Vegas, New Mexico. Rest assured, we have taken measures to make sure our herd stays safe. Our hearts go out to everyone who has been affected by the fires.
If you’ve been with us for a while, you know that we like to switch it up often with new products and offerings. Here at the shop we recently started carrying fresh baked bread, coffee beans, and a wider selection of charcuterie items. Until now our seafood has been almost exclusively from Alaska, but we are excited to announce that we are now sourcing some very tasty and exciting warm water fish that has been a huge hit so far.

Coming to us from warm, tropical ocean waters where wildfires are the furthest thing from the mind, we have some new products here at the shop and available on our website for online seafood delivery. We invite you to switch things up this spring with some small-batch, wild-caught tropical fish. All of this fish is line-caught by artisanal fisheries using small day boats and responsible fishing practices. Just picture the warm, tropical sun shining through clear, blue-green ocean waters. We’re passionate about our sourcing for meat and seafood and are excited to offer these delicious new options.
Ahi tuna steak is a personal favorite of mine, and it’s been flying off the shelves (both physically and virtually) since we started stocking these vibrant tuna steaks. The smooth, delicately flavored flesh is succulent and satisfying. Give it a quick sear on the grill with a simple marinade and some sesame seeds, or make Hawaiian style poke bowls (one of my all-time favorites!). This fish is totally craveable and not to mention beautiful with its tropical pink hue. Something about ahi tuna makes my mouth water just thinking about it. We also have wild caught yellowfin tuna steaks available. A little known fact outside of the seafood industry is that yellowfin and ahi tuna are actually the exact same variety of fish. The ahi is given a harmless treatment with carbon monoxide which causes the fish to preserve its natural color. Nothing harmful happens to the yellowfin when it naturally turns darker, and likewise the simple carbon monoxide treatment has no harmful effects to the fish or the person eating it. It’s a matter of personal preference and the visual appearance of your food.

Mahi mahi fillet is another tropical fish that has been wildly popular since we got it in stock. This fish is mild and slightly sweet in flavor with firm flesh that is delicious and very versatile for cooking. It tastes great all on its own with simple seasonings, or you can go for a spicier flavor profile with cajun spices or curry. Blackening the fish is a popular method for mahi mahi. These fish are absolutely stunning with vibrant, iridescent blue-green and golden skin.
Swordfish steak has been one of the most popular requests we’ve had from our customers. The flesh of this remarkable fish has a dense and meaty texture that makes it perfect for steak lovers. You can cook swordfish steaks like you would red meat steaks, with simple seasoning and a fast, hot sear on each side. This is a perfect option for someone who doesn’t consider themselves a seafood lover but wants to try out some lighter fare for the warm springtime weather.
