Belgian Waterzooi Recipe: Creamy & Delicious Chicken Soup

Waterzooi is a traditional Belgian soup that’s soothing, hearty and delicious. The name comes from the Flemish words for boiling water - a fitting name for a stew! This dish is usually made with chicken or fish. When cooked with chicken, it tastes a little like the Belgian version of chicken and dumplings. This soup is creamy, flavorful and satisfying. It dates all the way back to the Middle Ages, so it certainly has withstood the test of time. I used bone-in chicken thighs, but you could also make this with boneless chicken breast - just reduce the amount of cooking time for the chicken.

Belgian Waterzooi Recipe Creamy & Delicious Chicken Soup - Beck & Bulow

Ingredients:



  • 3 pounds chicken thighs
  • 1 pound parsnips, chopped
  • 2 leeks, sliced thin
  • 3 carrots, chopped
  • 2 ribs of celery, chopped
  • 1 large onion, chopped
  • 2 shallots, minced
  • ⅓ cup heavy whipping cream
  • 2 tablespoons butter
  • 2 egg yolks
  • Chopped fresh parsley
  • 1 lemon
  • 4 cups chicken broth
  • Sea salt & freshly ground black pepper

Instructions:



  1. Season the chicken on all sides with sea salt and freshly ground black pepper.
  2. Melt the two tablespoons of butter in a large Dutch oven over medium-high heat. Add in the minced shallots, chopped leeks, onions, celery, parsnips and carrots. Arrange the seasoned chicken thighs on top of the vegetables. Pour in the chicken broth, adding more if necessary to completely submerge the chicken. Season as desired with sea salt and freshly ground black pepper.
  3. Bring the pot to a boil, then reduce heat, cover and simmer for 2-3 hours, or until the chicken is fork tender. Remove the chicken from the pot with tongs or a slotted spoon and set aside to cool. Continue to simmer the soup for another half hour.
  4. When the chicken is cool enough to handle, shred the meat into large chunks and discard the bones. Set the shredded chicken aside.
  5. While the soup is simmering, beat the egg yolks and heavy cream together in a bowl. Gradually whisk the mixture into the soup.
  6. Juice the lemon into the pot and stir in the chopped parsley. Add the shredded chicken back into the soup and stir to combine.
  7. Serve and enjoy!

Sometimes chicken breast gets a reputation for being dry or boring, but I’ve found that with ours, nothing could be further from the truth. They turn out juicy, tender and absolutely delicious every single time I cook with them. This Mediterranean style orzo dish is made in the Instant Pot in mere minutes and has all of the flavor and nutrition I’m looking for in a quick and tasty lunch or dinner recipe. If you can’t find feta cheese stuffed olives, use whatever olives you can find and add in some feta cheese separately. Or you can leave it out completely… but who doesn’t love feta cheese? I recommend getting the goat milk variety for the best flavor. The herbes de Provence seasoning is one of my favorites to use on poultry and fish. It’s generally known as a French seasoning but it has all of the right elements for Mediterranean cooking, too. You can easily find it at any grocery store, or make your own.

Ingredients:



  • 2 pounds boneless, skinless chicken breasts, chopped into bite-sized pieces
  • 2 cups chicken broth or water
  • 2 heirloom tomatoes, chopped
  • 1 ½ cups feta cheese stuffed olives, sliced in half
  • ½ cup capers
  • 1 yellow squash, chopped
  • 1 red onion, diced
  • Juice of ½ lemon, zest of one whole lemon
  • 2 tablespoons olive oil
  • 1 tablespoon herbes de Provence seasoning
  • Fresh chopped parsley for garnish
  • 1 cup orzo pasta (uncooked)

Instructions:



  1. Add all of the ingredients except the orzo and parsley into the Instant Pot and combine. Secure the lid on the Instant Pot and make sure the pressure valve is sealed. Cook on the high pressure setting for 8 minutes, then carefully release the pressure valve.
  2. Once the pressure has finished releasing, remove the lid and add in the uncooked orzo pasta. Secure the lid and pressure valve once more. Cook on the low pressure setting for 3 minutes, then release the pressure. Cool with the lid off for 10 minutes before serving.
  3. Garnish with chopped parsley and a drizzle of olive oil. Serve and enjoy immediately!

The mild yellow aji chili adds the perfect amount of kick to this recipe. You can probably find aji amarillo paste if you have an international market nearby, but if not, habaneros will make a delicious substitute. Just blend them up in a blender (stems and seeds removed) with a couple tablespoons of oil to make your own paste.

Satisfying & Creamy Peruvian Chicken Aji de Gallina Recipe - Beck & Bulow

Ingredients:



  • 3 yellow potatoes, boiled and sliced in half
  • 2 lbs chicken breast, thawed
  • 3 slices of bread with the crust cut off
  • ½ cup milk
  • 2 cups chicken stock
  • 1.5 tablespoons aji amarillo chili paste
  • 2 tablespoons avocado oil
  • 2 cloves of garlic, minced
  • 2 small yellow onions, finely diced
  • ¼ cup chopped walnuts
  • ¼ cup grated Parmesan cheese
  • 3 cups cooked white rice
  • 3 hard boiled eggs, halved
  • 6 black olives, halved

Instructions:



  1. If the potatoes haven’t been prepared by boiling until fork tender, do so now. Slice in half and set aside, covered to keep warm. Season lightly with sea salt.
  2. Soak the bread in a shallow dish or bowl with the ½ cup milk. Set aside.
  3. In a large pot over medium high heat, boil the chicken breasts in salted water for approximately 12 minutes, or just until cooked all the way through (the juices will run clear). Let the chicken cool until it’s cool enough to handle. Shred the chicken using two forks or your fingers.
  4. Heat the avocado oil in a large cast iron skillet over medium heat. When hot, stir in the aji amarillo paste. Add the onion to the pan and cook for a couple minutes, then add in the garlic. Cook, stirring frequently, until fragrant and tender. Remove from the heat and set aside.
  5. Add the milk soaked bread, walnuts and Parmesan cheese to a high speed blender. Blend until smooth. Then, pour in the aji amarillo, onion and garlic mixture from the pan. Pulse until incorporated.
  6. Pour the mixture into the skillet and cook with 1 cup of chicken broth. Bring to a simmer and stir in the shredded chicken. Add more chicken broth until the desired consistency is reached.
  7. Serve the chicken over top of a halved boil potato. Add a scoop of rice on the side. Garnish with half of a hard boiled egg and black olives. Serve immediately and enjoy!

  • ¼ teaspoon water
  • ½ cup Japanese panko bread crumbs
  • 1 teaspoon Italian seasoning

  • ¼ teaspoon dried basil
  • ¼ teaspoon sea salt

Instructions:



  1. Preheat the oven to 400 degrees Fahrenheit. Prepare a baking sheet, lightly greased or lined with parchment paper if desired. Set aside.
  2. In a medium mixing bowl, combine the panko breadcrumbs, Italian seasoning, garlic powder, oregano, sea salt and mozzarella cheese. Set aside.
  3. In a smaller bowl, lightly whisk the egg and ¼ teaspoon of water together.
  4. Gently pat the chicken breast dry with paper towels. Cut into bite sized chunks.
  5. Working in batches, coat the chicken bites thoroughly in the lightly whisked egg. Then, dredge in the spice mixture and coat evenly on all sides. Place on the reserved baking sheet.
  6. Bake in the preheated oven for approximately 25-30 minutes, flipping once halfway through. The chicken nuggets should be golden, crispy and cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  7. When finished cooking, remove from the oven and let the chicken nuggets rest for about five minutes. Enjoy immediately with marinara sauce or any other dipping sauce you prefer.

  • 2 avocados, cut in half
  • ¼ teaspoon coconut sugar
  • 2 red onions, peeled and sliced
  • 4 green onions, sliced
  • 1 green bell pepper, sliced
  • 3 tablespoons lime juice
  • 1 tablespoon Bragg’s Liquid Aminos
  • Chopped cilantro and lime wedges for garnish
  • Red pepper flakes

Instructions:



  1. Set the chicken thighs out at room temperature for about 20 minutes. This will help them to cook more evenly.
  2. Preheat the oven to 450 degrees Fahrenheit.
  3. Heat the avocado oil in a cast iron skillet over medium-high heat.
  4. Season the chicken thighs with sea salt, freshly ground black pepper and green chile powder on all sides.
  5. When the oil is hot, add the chicken thighs to the pan and cook for 12 minutes, then flip and cook for another 10 minutes.
  6. Wipe out the skillet. Sprinkle the coconut sugar on top of the avocado halves, then place them in the hot pan facing down. Cook for about 2 minutes. Remove from the pan and set aside.
  7. Adding more oil to the pan if necessary, cook the red onions for approximately 3 minutes. Add in the green onions and bell pepper. Cook for another few minutes. Add in the lime juice and Bragg’s Liquid Aminos. Stir to combine.
  8. Place the chicken thighs and avocados back into the skillet. Bake in the oven for about 7 minutes or until the chicken is cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  9. Season with more sea salt and freshly ground black pepper if desired. Garnish with cilantro and limes. Serve and enjoy!

This recipe is full of delicious Vietnamese flavors with our juicy, tasty chicken thighs as a vehicle. The fish sauce is absolutely essential to the flavor profile, so don’t omit it! It’s easily found on the Asian aisle of any grocery store. The lemongrass should be relatively easy to find as well - if they don’t offer it fresh or with the herbs, check the frozen section. Aside from adding amazing, fresh flavor, lemongrass is also great for digestive health. What a lot of people don’t realize is that it’s common for chicken purchased in stores to get injected with saline to appear plump and fresh. As part of the USDA Never Ever 3 program, our chicken is never given any antibiotics, steroids or growth hormones. Furthermore, it is never injected or altered in any way after butchering. These birds are humanely raised and cage free, with plentiful space to roam freely in cozy, well-ventilated barns with access to the outdoors. They enjoy unlimited access to water and nutritious vegetarian food supplemented with enzymes, essential oils and vitamins. The chickens frequently relax in their cozy beds made of wood shavings and rice hulls. They are a Cobb Hubbard hybrid breed, carefully selected for the great flavor and consistency of the meat as well as their docile temperament. The barn attendants are trained in chicken behavior and take care to make the environment as naturally supportive as possible.


Ingredients:


(Serves 4)



  • 2 packages of chicken thighs
  • ⅓ cup fish sauce, divided
  • 3 stalks lemongrass, minced & divided
  • 2 tablespoons avocado oil
  • ⅓ cup coconut sugar
  • 1 whole head of garlic, minced & divided
  • 4 Thai chilis, minced, or 4 teaspoons red pepper flakes
  • 2 teaspoons sea salt, plus extra
  • Freshly ground black pepper
  • ¾ cup coconut water
  • Cooked jasmine rice for serving

Vietnamese Chicken Thighs With Caramelized Coconut Sugar - Beck & Bulow

Instructions:



  1. Thaw the chicken thighs overnight in the refrigerator. Remove from packaging and pat gently dry with paper towels.
  2. Place the chicken thighs in a mixing bowl. Add in 3 tablespoons of fish sauce, 3 tablespoons of minced lemongrass, all of the avocado oil, 2 tablespoons coconut sugar, 2 tablespoons of the minced garlic, 2 teaspoons of sea salt, and half of the minced Thai chili or red pepper flakes. Season with freshly ground black pepper and combine thoroughly. Marinate the chicken at room temperature, covered, for at least 15 minutes and up to one hour.
  3. Place a large dutch oven over medium heat. Sear the marinated chicken thighs for approximately 4-5 minutes, skin side down first. Work in batches if necessary. Transfer the seared chicken thighs to a plate. The chicken will not be fully cooked at this point, only seared. Pour any residual liquid out of the dutch oven and discard.
  4. Put the emptied dutch oven back over medium heat. Add in 2 tablespoons of coconut sugar and spread into a thin, even layer on the bottom of the pot. Let the sugar caramelize, undisturbed, for approximately 5-8 minutes.
  5. When the coconut sugar is caramelized completely, add in the rest of the minced garlic, lemongrass and Thai chilis or red pepper flakes. Stir to combine for approximately 30 seconds.
  6. Add the coconut water to the dutch oven, along with the remaining coconut sugar and fish sauce. Place the seared chicken thighs in the dutch oven. Use tongs to flip the thighs a couple times, making sure they’re coated evenly. Place them with the skin side facing up.
  7. Reduce the heat and bring to a simmer. Cover the dutch oven halfway with the lid. Cook for approximately 20-25 minutes, until the chicken is cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  8. Serve the chicken thighs over freshly cooked jasmine rice. Spoon braising liquid over the top. Extra sauce can be served on the side for dipping.

Duck bacon is actually meat cut from the breast of the duck where there is a large amount of fat. Nonetheless, it’s incredibly similar in texture and flavor to more familiar varieties of bacon. Our ducks are raised in quiet, spacious barns on a small group of farms in rural Indiana. They are often raised by Mennonite or Amish farmers, and are lovingly cared for on family farms. They are White Perks ducks, bred for their tender, mild flavored meat that is preferred by most people with an Americanized palette. This duck meat easily adapts to a wide range of flavor profiles and cuisines.

Ingredients:


(Serves 4-6)

  • 1 head romaine lettuce, chopped
  • 4 hard boiled eggs, sliced
  • 1 pound chicken breast, cooked and chopped
  • 10 slices duck bacon, finely chopped
  • 1 ripe avocado, sliced
  • 4 oz blue cheese crumbles
  • Chopped chives for garnish

  1. Cook the eggs, chicken breast and duck bacon in advance. Set aside.
  2. Divide the chopped romaine lettuce evenly between bowls for serving. Split the hard boiled eggs between the bowls, arranging attractively. Then add the chopped chicken breast, duck bacon, avocado, blue cheese, and tomatoes. Distribute all ingredients evenly throughout the bowls.
  3. Season each salad as desired with sea salt and freshly ground black pepper. Garnish with chopped chives and dressing on the side or drizzled over top.

Ingredients:



  • ¾ cup feta cheese
  • ½ cup spinach
  • 1 teaspoon garlic salt
  • ¼ cup chopped green onions
  • 3 tablespoons sour cream
  • 3 tablespoons avocado oil
  • 2 packages chicken breasts

Instructions:



  1. Thaw the chicken overnight in the refrigerator. Pat dry and let sit at room temperature for approximately 15 minutes before cooking.
  2. Preheat the oven to 450 degrees Fahrenheit.
  3. In a medium bowl, combine the feta cheese, spinach, garlic salt, green onions and sour cream.
  4. Use a small, sharp knife to cut a slit all the way down each chicken breast. Make it lengthwise and deep enough to make a nice pocket for the filling. Season the outside of the chicken breasts with sea salt and freshly ground black pepper.
  5. Stuff each chicken breast with the filling mixture, distributing it evenly throughout the chicken breasts.
  6. Heat the avocado oil over medium-high heat in a cast iron skillet. Cook the chicken breasts, working in batches if necessary, until golden brown on each side.
  7. Transfer the whole skillet to the preheated oven and bake for 5-7 minutes. The chicken should be cooked all the way through - juices should run clear and a meat thermometer should read 165 degrees Fahrenheit.

Delicious & Easy Broccoli Cheddar Chicken Casserole - Beck & Bulow

Ingredients:



  • 1 tablespoon avocado oil
  • Sea salt and freshly ground black pepper to taste
  • 1 onion, finely chopped
  • 3 parsnips, chopped
  • 1 pound chicken breast, cubed
  • 2 tablespoons grass fed butter
  • 1 ½ cups white rice (jasmine or basmati are my favorites)
  • ½ cup orzo pasta (uncooked)
  • 2 tablespoons fresh thyme, chopped (extra for garnish if desired)
  • 1-2 chicken bouillon cubes
  • 3 ½ cups water
  • 3 cups broccoli, chopped
  • 2 bay leaves
  • ½ teaspoon garlic powder
  • ¾ teaspoon red pepper flakes (more or less to taste)
  • Zest of ½ of a large lemon
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese

Delicious & Easy Broccoli Cheddar Chicken Casserole - Beck & Bulow

Instructions:



  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Heat the 3 ½ cups of water and stir in the chicken bouillon until fully combined. Set aside.
  3. Heat the avocado oil in a large dutch oven over medium heat. When it’s hot enough, add the chopped onion and carrot. Sauté until fragrant - approximately five minutes.
  4. Stir the chicken into the pot. Season as desired with sea salt and freshly ground black pepper. Cook for approximately 2-3 minutes until the chicken is nicely seared.
  5. Add the rice, orzo, butter and chopped thyme. Stir frequently, cooking for 2-3 minutes until the grains are golden brown and toasted.
  6. Add the chicken bouillon to the pot. Bring to a boil and then add in the broccoli, garlic powder, red pepper flakes, bay leaves and a generous amount of sea salt and freshly ground black pepper. Return to a boil, then cover the dutch oven and reduce the heat to low. Cook for approximately 20 minutes, until the rice is close to fully cooked but not quite.
  7. Stir in the milk, lemon zest, and ½ cup of the shredded cheddar cheese. Stir to combine. Top the casserole with the remaining shredded cheese.
  8. Bake the casserole in the oven for 15-20 minutes until it begins to get brown and golden on top.
  9. Serve immediately, garnish with chopped thyme or basil.
