My life really changed when I started eating quality meat. My health and general wellbeing has drastically improved, and the things that I create in my kitchen have increased exponentially in deliciousness. To be honest, I didn’t really start to explore the world of cooking until I started purchasing meat that I felt really excited about having in my freezer, just waiting to be prepared and enjoyed. Before this, I was vegan and I don’t think I even knew what osso buco was. Now it’s one of my favorite cuts - that slow cooked, fall-off-the-bone meat, that luscious bone marrow. There’s lots of different ways to prepare osso buco, a classic Italian dish. This version features a Japanese panko breadcrumb crust with wild boar bacon bits and Parmesan cheese.

If you’ve never tried our wild boar bacon before, get ready to be obsessed. Bacon is already known for being one of the most delicious foods in existence. Our wild boars roam the forests of the Southwest, foraging their natural preferred diet of roots, nuts, berries and tubers. This gives our wild boar meat a nutty, complex flavor profile that has so much depth and dimension compared to conventional pork bacon. It’s also slightly less greasy than conventional bacon and contains more vitamins and minerals.

Bison Osso Buco With Wild Boar Bacon Parmesan Crust - Beck & Bulow

Ingredients:



  • 4-5 pounds Bison Osso Buco
  • Sea salt and freshly ground black pepper
  • 1 ½ tablespoons bison tallow
  • 4 ounces wild boar bacon, chopped into bits
  • 10 whole cloves of garlic
  • 1 large onion, peeled and cut into quarters
  • 2 heads of garlic, halved
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 bay leaves
  • 1 cup white wine
  • 1 28oz can whole peeled organic tomatoes
  • 4 cups bison bone broth
  • ¾ tablespoon avocado oil
  • 1 ½ cups Japanese panko breadcrumbs
  • ¼ cup grated Parmesan

Bison Osso Buco With Wild Boar Bacon Parmesan Crust - Beck & Bulow

Instructions:



  1. Preheat the oven to 300 degrees Fahrenheit. Season the bison osso buco generously all over with sea salt and freshly ground black pepper.
  2. Heat the bison tallow in a large Dutch oven over medium-high heat. Cook, without overcrowding, until they are seared golden-brown on all sides. Set aside.
  3. Reduce the heat to medium and add in about ⅔ of the chopped wild boar bacon. Cook, stirring frequently, just until the fat starts to render - do not cook to crisp at this point.
  4. Add the quartered onion, cloves of garlic, bay leaves, rosemary and thyme to the Dutch oven. Stir to combine. Add the wine to the pot and bring to a simmer. Cook until the liquid reduces by about half.
  5. Add the can of tomatoes into the pot, crushing them with a wooden spoon or your fingers. Pour in the bison bone broth. Then, add the osso buco back into the pot. Add water as necessary to cover with liquid. Season generously with sea salt and freshly ground black pepper. When the pot comes to a simmer, put on the lid and place in the preheated oven.
  6. Cook for approximately 1 ½ - 2 hours. Check occasionally and add more water if necessary to keep the meat completely submerged. The meat should be meltingly tender when finished cooking.
  7. Remove the osso buco from the oven and let it cool for approximately 10 minutes in the pot. Then transfer the meat to a separate surface and tent with aluminum foil.
  8. Pour the liquid from the pot through a strainer into a saucepan on the stove. Bring to a simmer and cook for approximately 30 minutes until the liquid reduces significantly. Season to taste with sea salt and freshly ground black pepper.
  9. While the liquid is cooking, add the rest of the chopped wild boar bacon to a cast iron skillet over medium heat. Cook until crispy. Place the cooked bacon on a paper towel lined plate.
  10. Heat the avocado oil in the skillet. When it’s hot, add in the breadcrumbs. Season with salt and pepper. Cook, stirring occasionally until crispy and golden. Add in the grated Parmesan and crispy wild boar bacon bits. Stir to combine. Transfer to a bowl and set aside.
  11. Place the osso buco in a serving dish or platter. Add some of the reduced braising liquid over the top, followed by the breadcrumb mixture.

It’s very similar, but with a slightly sweeter taste. It’s naturally leaner and more tender. It has no “gamey” flavor whatsoever.


The key to preparing delicious bison is not to overcook it. It always needs to be cooked less than you would typically cook the same cut of beef. When cooked too much, bison will become tough - we always recommend cooking to medium rare for the ultimate flavor and texture. Ingredients:



  • 2 fresh pizza dough circles
  • 3 tablespoons bison tallow, divided (2 tablespoons need to be melted)
  • 2 pounds ground bison
  • 2 cans whole tomatoes, drained
  • 3 cloves of garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 16 oz shredded Italian blend cheese
  • 2 eggs, lightly beaten
  • 1 teaspoon water
  • Marinara sauce for serving

Homemade Pizza Calzones With Ground Bison And Fresh Herbs - Beck & Bulow

Instructions:



  1. Place 2 large baking sheets in the oven before preheating to 450 degrees Fahrenheit. Leave the baking sheets in while the oven heats up.
  2. Lightly flour a surface to place the pizza dough on. Cover the dough with plastic wrap. Leave covered for approximately 20 minutes.
  3. Heat one tablespoon of bison tallow in a large cast iron skillet over medium-high heat. Add the ground bison to the skillet and cook just until brown. Use a wooden spoon to break up the meat into crumbles as it cooks. Take care not to overcook the bison meat.
  4. Stir the tomatoes into the meat, crushing them with the spoon as you do so. Add the minced garlic, basil, parsley, oregano, sea salt and freshly ground pepper to the skillet. Bring the mixture to a boil, then reduce heat and simmer for 8-10 minutes. Take the skillet off the heat and set aside.
  5. Slice each pizza dough round into 4 pieces. Roll each section into its own circle, using a lightly floured surface to work on.
  6. Spread the meat mixture equally inside each calzone. Add ½ cup shredded cheese on top of each.
  7. Make an egg wash by whisking together the egg and water. Brush around the edges of each circle of dough, then fold over in half, pressing the edges together with your fingers or a fork. Brush the tops of the calzones with 2 tablespoons of melted bison tallow.
  8. Place the calzones on 2 sheets of parchment paper. Carefully pull the hot pans out of the oven so they’re accessible. Carefully place the sheets of parchment paper with the unbaked calzone on each baking sheet.
  9. Bake in the preheated oven for approximately 18-20 minutes, until they’re golden brown. Swap the positions of the pans halfway through baking so they spend equal time on the top rack.
  10. Let the calzones rest for five minutes before serving. Enjoy immediately with marinara sauce for dipping.

A Halloween themed dinner can really make things feel festive and these pigs in a blanket are easy and fun to make. You could always make your own biscuit dough if you prefer, but using canned really takes me back to my childhood and makes this recipe incredibly simple to prepare. My personal favorite is the canned croissants or crescent roll dough. The hardest part is probably opening the pressurized can. Does anyone else get nervous doing that? But after all, it’s Halloween, so a little scare will only add to the fun.

Halloween “Mummy” Pigs In A Blanket With Bison Hot Dogs - Beck & Bulow

Ingredients:



  • 8 bison hot dogs
  • 1 can of crescent rolls or approximately 8 oz of homemade biscuit dough
  • 1 egg
  • 2 tablespoons water
  • Mustard
  • Ketchup
  • Hot sauce and any other desired toppings for serving

Instructions:



  1. Preheat the oven to 375 degrees Fahrenheit. Prepare a baking sheet - lining with parchment paper is recommended.
  2. Unroll the canned crescent dough, or prepared biscuit dough. Cut the dough into the thinnest strips possible for mummy wrapping.
  3. Use a paper towel to gently pat the hot dogs dry. This will make a better surface for adhering the “mummy wraps”.
  4. Wrap the strips of dough around the hot dogs to look like a mummy’s bandages. Criss cross them and leave one end open for the “face”. Place them on the prepared baking sheet.
  5. Make an egg wash by whisking together the egg with the two tablespoons of water.
  6. Brush the egg wash onto the dough “bandages”.
  7. Bake for approximately 12-15 minutes, or until the dough is golden brown.
  8. Use ketchup and mustard to make eyes on the faces of the mummies. Serve immediately with desired condiments and enjoy!

Ingredients:



  • 3 tablespoons avocado oil
  • 1 tablespoon bison tallow
  • 2 pounds bison stew meat cubes
  • 1 whole onion, diced
  • 4 cloves of garlic, minced
  • 1 bottle or can of good beer
  • 4 cups bison bone broth
  • 2 cups water, + more as needed
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • ½ teaspoon paprika
  • Sea salt and freshly ground black pepper to taste
  • 1 ½ teaspoons coconut sugar
  • 4 parsnips, chopped
  • 4 potatoes, cut into large chunks
  • Minced parsley for garnish

Instructions:



  1. Heat the avocado oil and bison tallow in a large pot over medium-high heat. Sear the stew meat cubes on all sides, setting aside on a separate plate. Cut the seared chunks into desired size.
  2. Place the onions into the pot. Cook, stirring frequently, until tender and fragrant. Add the garlic in and cook for approximately one minute.
  3. Add the beer and bison bone broth to the pot. Stir to combine, then add in the Worcestershire sauce, tomato paste, paprika, and coconut sugar. Season as desired with sea salt and freshly ground black pepper.
  4. Add the seared bison stew meat cubes back into the pot. Give it a stir, cover and simmer for 1.5 to 2 hours. As the stew cooks, it should thicken some. If it becomes thicker than you desire, simply add water as needed.
  5. Add the parsnips and potatoes to the pot. Cook for approximately 30 more minutes, adding more water as needed. Season to taste.
  6. Serve garnished with parsley if desired. Delicious soaked up with some good crusty bread.

Ingredients:


(Serves 4)



  • 1 ½ pounds ground Bison Primal Blend
  • 2 cups shredded Mexican cheese
  • ½ cup Japanese panko bread crumbs
  • 2 tablespoons chopped fresh parsley + extra for garnish
  • 2-3 cloves of garlic, minced
  • 1 jalapeno, finely chopped
  • 1 egg
  • 1.5 teaspoons ground cumin
  • Sea salt & freshly ground black pepper
  • 1 tablespoon bison tallow
  • ½ large yellow onion, chopped
  • 1 can crushed tomatoes
  • 2 tablespoons canned chipotle chiles in adobo

Instructions:



  1. In a medium mixing bowl, combine the Bison Primal Blend, half of the shredded Mexican cheese, panko bread crumbs, 2 tablespoons of chopped parsley, minced garlic, chopped jalapeno, egg and cumin. Season with sea salt and freshly ground black pepper. Mix together just until combined, then shape into meatballs using your hands.
  2. Heat bison tallow in a large cast iron skillet over medium-high heat.
  3. Add the meatballs to the skillet, working in batches if necessary to ensure they are in a single layer. Sear for a total of approximately 3-4 minutes, moving the meatballs around to get an even sear on all sides. Transfer the seared meatballs to a plate and set aside.
  4. Add the chopped onion to the skillet. Cook, stirring frequently, until tender. Add the an of crushed tomatoes and 2 tablespoons of chipotle pepper in adobo sauce to the skillet. Stir to combine and bring to a boil.
  5. Reduce the heat to medium-low and add the meatballs to the skillet. Cover and simmer for approximately 8 minutes, until the meatballs are cooked through. Keep in mind that bison cooks more quickly than beef.
  6. Add the remaining cup of shredded Mexican cheese to the skillet on top of the meatballs. Cover to melt the cheese for a minute or two.

Recently we received four enormous buffalo bull skulls, and they’re some of the most beautiful ones I’ve ever seen. In fact, I’ve been seriously tempted to snag one myself to hang in my house. They’re absolutely stunning and there’s so much symbolism and wisdom that comes from the buffalo that it’s hard to not want to make it a permanent fixture in your home. Buffalo bull skulls can vary in size quite a bit. The ones we currently have are huge, from fully matured bulls, with enormous horns spanning more than two feet. I find them to be absolutely hypnotizing. They are currently available for purchase on our website, while supplies last.

The Buffalo: An Age Old Symbol


The buffalo skull is a physical representation of the qualities that are embodied by these amazing animals. The Lakota people of the plains honor the buffalo for many reasons. When a buffalo is killed, there is so much meat that the hunter will have no other option but to share with everyone around him. In this way the buffalo bestows abundance and generosity. One buffalo can feed many families. When a hunter successfully takes down a buffalo, the entire tribe benefits.


Not so long ago, the Lakotas got everything they needed from the buffalo. The bones made tools, jewelry and other items. Organs like the bladder could be used as water vessels. The meat sustained them and provided a multitude of healing benefits. The hides made warm clothes, tipis, and drums. The impressive skulls were (and still are) used for ceremonial purposes. The buffalo represents the ultimate self-sacrifice for the well being of others, giving every part of itself to sustain the people.
